I have a weakness for desserts with peanut butter. It's usually hard to come across an already made peanut butter flavored cake, so I just make my own. This weekend my house smelled like fresh baked peanut butter cupcakes and it was divine! I almost didn't save any for photos, but not sharing this recipe with y'all wouldn't be fair. Besides, I have a wedding dress to fit into anyway, so I needed some sort of motivation not to eat them all. I can't promise it's easy to resist though, because they're that good!
WHAT YOU NEEED
For the Cake:
1 box Pillsbury Purely Simple White Cake Mix
4 eggs
1/2 cup peanut butter
1/2 cup softened butter
Butter cream icing
For the Peanut Butter Drizzle:
3 cups powdered sugar
1/2 cup peanut butter
1/2 cup softened butter
2 tbs milk
WHAT YOU DO
For the cake: Heat peanut butter in the microwave for about 30 seconds or until softened. Add the eggs and butter, then mix together the
Pillsbury Purely Simple cake mix with peanut butter until you reach a creamy texture. Fill cupcake cups with batter about halfway full in each cup. Bake in the oven on 350 degree for approx. 20 minutes or until slightly golden at top. Remove from oven and let cool. Spread butter cream icing onto each cupcake once cooled.
For the peanut butter drizzle: In a separate mixing bowl, heat peanut butter for approx. 30 seconds or until softened. Add the softened butter and mix until smooth and creamy. Mix in the powdered sugar and milk and continue mixing until well combined and smooth. Drizzle mixture with a spoon ontop of each cupcake.

The mix of butter cream and peanut butter drizzle add a great balance to the peanut butter flavored cake. The peanut butter drizzle can also serve as a peanut butter icing if you want more of a peanut butter flavor. I made the cupcakes in both options, with and without butter cream, and both tasted great. White cake mix is ideal for this recipe so you really taste the added peanut butter. I'm glad I found the Pillsbury Purely Simple at Kroger. It is great particularly for this recipe since there are no artificial colors, bleached flour, or artificial preservatives. It really allows the homemade taste to come through.
