Southwestern Chipotle Grain Salad with Suddenly Salad

Southwestern Chipotle Grain Salad Recipe
Taking less than an hour out of one day a week to meal prep saves me a lot of time, keeps me full when I'm hungry, and stops the temptation to pick up fast food.  Sometimes I prepare multiple meals ahead for the week and sometimes I focus on just a quick and easy lunch.  Recently I decided to give Suddenly Grain Salad a try and it turned out to be a great meal prep option.  All I did was follow the instructions to make the Suddenly Grain Salad recipe and then added in some grilled rotisserie chicken.  I usually run out of easy lunch ideas, so this southwestern chipotle grain salad has become a great way to change things up.
Suddenly Grain Salad
WHAT YOU NEED
1 box of Betty Crocker Suddenly Salad Southwest Grains
1 Grilled Rotisserie Chicken Breast 
1 tbs Olive Oil
1 tbs Water

WHAT YOU DO
Per instructions of Betty Crocker Grain Salad, fill a 3 quart pot half full with water and heat to boiling.  Place bag of grains from the Suddenly Grain Salad box into boiling pot of water, and continue to boil for approx. 17 minutes, flipping the bag halfway through.  Once done, drain the bag of grains and water, then run bag of grains under cold water for approx. 1-2 minutes to cool.  In a separate bowl, mix together the chipotle sauce packet with 1 tbs. of olive oil and 1 tbs. of water.  Combine the bag of grains with the chipotle sauce until throughly mixed together.  Top with grilled chicken breast and serve warm or cold.

This is a great alternative when you don't have time to cook during the week but still want to meal prep!  The southwest grains recipe is made of brown rice, quinoa, black beans, corn, red peppers, and a chipotle vinaigrette, so it's a great way to get in a variety of grains!
